This is one of my favorite gluten and dairy free recipes. I had wanted to post this earlier in the spring at the peak of asparagus season but technology glitches made it impossible so here it is featured for early summer instead. I have to admit that one of the dishes I miss on a gluten and dairy free diet is a nice cheesy casserole. Casseroles are great comfort food.
