Cabbage Three Ways Gluten-Free Part Three

Cabbage Three Ways Gluten-Free Part Three

Cabbage Soup Last but not least is my cabbage soup recipe. Does anyone out there remember the cabbage soup diet? All you had to do is eat cabbage soup all day and you would lose weight. We all thought it had some magical properties about it but what we were doing is just cutting out all processed foods and sugar from our diet which naturally resulted in weight loss. I would eventually pass out and have to be revived with a burger from McDonald’s (this was the 70’s and 80’s, mind you). I am a protein person. If I don’t have adequate protein in my meals, I can get...

Gluten Free | Roast Beef | Yorkshire Pudding

Gluten Free | Roast Beef | Yorkshire Pudding

Many years ago when my older children (now 20 and 21 years old) were young, another parent told me their tradition of preparing and sharing a meal at least once a year that honored their family heritage. Since my children are not too familiar with their deeper roots as we are true blooded Americans (a mix of multiple ethnicities), I had to research the most common genetic thread. The one that I have found common on both sides of my children’s ancestry is English. My fifth generation grand father, Richard Pounder (later changed to Pounders), is believed to have landed in the Baltimore...

Easy Holiday Appetizers | Gluten Free

Easy Holiday Appetizers | Gluten Free

After I became gluten and dairy-free, I dreaded having to take food to parties. I wanted to take something everyone would enjoy and not shun because it was GF. Prior to my GF lifestyle, most of my dishes I liked to share were drenched in wheat and cow’s milk. It took some thinking out of the box but I was able to throw together some tasty dishes together that were enjoyed by all. I’ve featured here some super easy to prepare appetizers. The first is one of my favorites. You can either take prepared bread slices like these below offered by Mariposa Bakery in Oakland and San...

Roasted Butternut Squash and Apple Quinoa

Roasted Butternut Squash and Apple Quinoa

Since going gluten-free, one my meal survival strategies is to weave the flavors of the season into my gluten-free grains (such as quinoa – pronounced keen-wah, brown rice, millet, buckwheat, teff and sorghum). I was recently asked to develop a fall quinoa recipe for a local magazine and in the process came up with this dish. I love the roasted flavors of the onion, apple and butternut squash  I think it could be a perfect side dish for the upcoming holiday dinners you may be attending. If you buy the squash already cut up from Trader Joe’s or Costco, this dish is super easy to...

GFCF Casserole – Comfort Food

GFCF Casserole – Comfort Food

I have to admit that one of the dishes I miss on a gluten and dairy free diet is a nice cheesy casserole. Casseroles are great comfort food. I love them because usually they will last two meals at my house which gives me a night off from cooking (big smiley face). Since I have a “dual household” of both gluten/dairy eaters and non-gluten/dairy eaters, it has been a challenge to accomplish a casserole everyone is happy with. Well, I think I nailed it. This casserole got a “thumbs up” from everyone at our house. Recipe is being updated – Coming Soon!  ...
