Bacon Caramelized Onion Pizza

10 gluten and dairy free bacon slices (Applegate orNiman Ranch) cut into small pieces
5 cups sliced onions (about 3 large)
1 large egg or equivalent egg replacer
½ cup Tofutti brand non-dairy sour cream
½ Tbs. salt
½ Tbs. pepper
2 Gluten Free Udi pizza crusts

Preheat oven to 375 F.  Sauté bacon in large heavy skillet over medium-high heat until slightly crisp.Drain all but 1 tablespoon bacon drippings from skillet. Add onions to bacon and sauté over medium heat until onions are very tender but not brown, about 20 minutes. Cool.

Whisk egg, sour cream, salt and pepper in large bowl to blend. Stir in cooled onion mixture. Spread onion mixture over pizza crusts, leaving ¼ inch border around edges.

Bake tart until onion custard is set and crust is golden brown around the edges and brown on bottom, around 15 to 20 minutes.
