Shrimp with asparagus and carrots

This is one of my favorite gluten and dairy free recipes. I had wanted to post this earlier in the spring at the peak of asparagus season but technology glitches made it impossible so here it is featured for early summer instead. Luckily, Costco carries asparagus year round which makes it easy to enjoy this dish any time of year. I buy the shrimp from Costco as well. They carry it in a big bag that is frozen. You can ask for it at the meat counter and they’ll get it out of the freezer for you. Otherwise it is normally stocked in the seafood section already thawed out. It’s $9.95 a pound for huge jumbo shrimp. I like to keep these in the freezer for quick and easy access. I hope you enjoy this as much as I do.

Take shrimp out of the freezer and allow to defrost

In the morning, I take the shrimp from the freezer and let it defrost on a tray. If you are not using Costco shrimp, you will need to peel and devein your shrimp. Costco’s shrimp is already deveined.

Peeled and Deveined Shrimp with salt and pepper

Add salt and pepper to the shrimp and set aside. You can then begin chopping the vegetables.

Chop the asparagus in thirds or fourths depending on the size

To make the process easier, I buy whole garlic cloves from Trader Joe’s

Cut garlic cloves into thin slices

I love this zester from Sur la Table. It allows you to zest and measure.

I add the lemon zest and other seasonings right into the bowl of chopped vegetables.

After cooking the shrimp and setting aside, you will then cook the garlic slices for 30 seconds and then add the chopped veggies. See below for the complete recipe.

Serve over prepared brown rice or quinoa and enjoy!

  2. This looks delicious, Kim – I’m going to make it! I might have to substitute spinach or even bok choi now that asparagus is out. I’m wondering about the shrimp from Costco? I don’t buy shrimp there b/c I think most of it comes from thailand and it’s farmed and chemicals are used. Do they have some more sustainable choices now in shrimp? Just curious. I haven’t checked in awhile and I always go to WF and Gene’s for seafood, but the prices!

      Thanks for drawing my attention to this. I don’t consume shrimp on a regular basis so up until now I have not worried too much about this issue. I will definitely research this and let you know if I find anything useful. I’ve heard the best way to buy seafood is to go to San Francisco where it comes in and unfortunately this practice doesn’t suite my current lifestyle although I’ve got it on my “bucket list.” 🙂 Where does WF and Gene’s source their seafood (shrimp)?
