Camping Gluten, Dairy and Dye-Free

Camping Gluten, Dairy and Dye-Free

When I first went gluten and dairy free, it was hard to imagine taking my new GFCF lifestyle on the road. Everything seemed so overwhelming at first. Now after five years, I’ve transitioned all our essential recipes/dishes and treats to gluten and dairy free. For the most part, we don’t miss the gluten or dairy and camping is no exception. One of my strategies is to make dishes that everyone can eat including my older kids who are still gluten and dairy consumers. One day, I’ll convert them but meanwhile choosing meals that are naturally gluten and dairy free helps...

Book Review – Healthier without Wheat

Book Review – Healthier without Wheat

“Did nature ever intend for us to eat what we eat?,” Dr. Stephen Wangen. I love this question. This is how Dr. Wangen starts out his book, Healthier without Wheat. This is also how I start out when I’m coaching someone. I explain that I’m not advocating some “outlandish” eating style. I’m actually recommending to go back to the roots of our eating. Many people comment to me about the GFCF diet and how hard it must be. Many call it a “fad” and wonder how I stay healthy on it. This is a common Thanksgiving dinner discussion with family. Can...

Valentine Treats

Valentine Treats

I am on an endless quest for healthier and fun holiday treats for my son. I find it stressful to deal with holidays, birthdays and any other event that offers buffet tables of food my son and I should not eat. As I’ve delved deeper into a healthy eating style, I’ve become so conscious of the toxic junk our children are consuming and its effects on their health that I no longer can even donate my son’s candy he receives at various events. I’m sorry to say that if it makes its way to my home, it goes straight in the garbage. I decided that if I don’t want to...

Product Review – King Arthur GF Cake Mix…OMGoodness!

Product Review – King Arthur GF Cake Mix…OMGoodness!

In my opinion, King Arthur Flours (KAF) has always been the “Cadillac” of baking products. I used King Arthur flour when I was a “gluten eater” and now that they have a full line of gluten free baking products, I suspect this will continue to remain true. KAF was kind enough to provide me with many samples of their GF products to review. The first box I opened is the GF chocolate cake mix. My son, Sammy, celebrated his half birthday at school this past week and wanted a chocolate cake. Pamela’s brand of GF cake mix has always been my favorite but OMGoodness,...

Restaurant Review – Frankie, Johnnie and Luigi, Too!

Restaurant Review – Frankie, Johnnie and Luigi, Too!

I was truly shocked to hear that Frankie, Johnnie and Luigi, Too in Dublin had not only gluten free pizza but gluten free pasta as well. We decided to head over there last night. My son is always excited about the prospect of ordering gluten free pasta in a restaurant. This place has a nice family feel to it. We went around 5:30pm so we were seated right away. The waitress was really sweet and tried to answer all my ingredient questions the best she could (can you relate to this?) but what proceeded to unfold was pure disaster. Let me add that it did not help that I was starving. We decided...
