Gluten Free | Carrot Cake | Dairy Free Cream Cheese

Really yummy gluten-free carrot cake!                       The cake started to lean to the side after sitting at room temperature. If you want to do a “layer” type cake as seen here, I suggest you keep the cake refrigerated at all times.  You can also do a sheet cake or cupcakes to avoid this problem. Tofutti brand cream cheese contains soy but would yield a firmer cream cheese frosting that may be less likely to cause the layers to slide. I love making cake pops for gifts. Kids love them and they are super easy to make. I posted about Easter cake pops in 2012 which I made for Sammy’s preschool class. They were a big hit. She offers breakfast options including several dairy-free smoothie recipes, an appetizer section called “Small Bites,” a section for fish and shellfish, poultry and meat, and even a vegetarian section. She finishes off the...

Teacake Bake Shop – OMGoodness!

Teacake Bake Shop – OMGoodness!

I used my favorite Gluten Free (GF) app, GF Registry to find this little gem in Emeryville, California. While looking for a place to eat, this bake shop, Teacake Bake Shop, popped up on the GF Registry list. They only had one gluten-free cupcake option which was initially disappointing. I came close to not trying it because it was not chocolate. For me, if it’s not chocolate, it’s not worth the calories. But since I do blog about GF retailers and products, I...
